Beef Steak and Potatoes

No trick, no twist, just the thing done properly. Which mostly comes down to a hot pan and leaving it alone.

What this is

A steak, cooked properly, with roast potatoes. No reinvention, no twist.

I include it because people who train are told constantly to eat this and rarely told anything useful about how. And because there is a genuine tension in cooking meat at high heat that deserves stating plainly rather than either ignoring or catastrophising.

Both sides of that tension are below, with the numbers.

Ingredients

For 2 servings

2 steaks, sirloin, ribeye or rump, about 250 g each, 3 cm thick 800 g potatoes, skin on, cut into chunks 2 tbsp olive oil or beef dripping 2 cloves garlic, unpeeled and bashed 2 sprigs rosemary or thyme 30 g butter Flaky salt and coarse black pepper

To serve: a green vegetable, mustard, a squeeze of lemon over the greens

Method

1. Take the steaks out of the fridge 30 minutes before cooking. Cold meat cooks unevenly.

2. Heat the oven to 200C. Parboil the potatoes 8 minutes, drain, and shake them in the colander to rough up the edges. Toss with oil, salt, and roast 40 minutes, turning once.

3. Pat the steaks completely dry with kitchen paper. Wet meat steams instead of browning. Season generously with salt just before cooking.

4. Get a heavy pan properly hot but not smoking violently. Add a little oil.

5. Sear the steaks 2 to 3 minutes each side for medium-rare on a 3 cm cut. Aim for a deep brown crust rather than a black one, for the reason below.

6. Drop in the butter, garlic and herbs, tilt the pan, and spoon the foaming butter over the steaks for 30 seconds.

7. Rest the meat 5 to 8 minutes before cutting. This is not optional; cutting early loses the juice onto the board.

8. Slice against the grain and serve with the potatoes.

The honest problem with high-heat cooking

This is the section most food writing avoids, and it deserves the space.

A review synthesised current evidence on heat-induced toxicants in thermally processed foods: acrylamide, heterocyclic aromatic amines, polycyclic aromatic hydrocarbons and advanced glycation end-products. It examined how these are associated with carcinogenicity, neurotoxicity and metabolic dysfunction through oxidative stress, inflammation and genotoxicity, alongside detection methods and mitigation approaches spanning raw material selection, enzymatic pre-treatment and processing optimisation.

The framing is what makes it useful. Thermal processing creates golden-brown hues, flavourful aromas and crispy textures, and the very Maillard reactions, caramelisation and lipid degradation that produce those desirable attributes simultaneously generate the hazardous compounds.

The review's stated unique contribution is a systematic analysis of what it calls the intrinsic biochemical entanglement between desirable sensory properties and toxicant generation, demonstrating that the Maillard reaction constitutes a critical branching point.

Entanglement. Branching point. The crust is not incidentally related to the compounds, it is the same chemistry.

What that means practically is not that you should stop searing meat. It means deep brown rather than blackened, avoiding flare-ups and charring, not cooking things until they are burnt and then eating the burnt part because it tastes good.

And it means the marinade is not just flavour. A separate review found honey-containing marinades, acting as antioxidants, reduced heterocyclic amine formation in grilled meat, which is a straightforward mitigation you can apply at home.

This is a review of the chemistry and its associations, not a study measuring health outcomes in people eating steak. Associations with carcinogenicity are established for these compound classes in the research literature; the dose you receive from a home-cooked steak with a brown rather than black crust is a different question, and this article makes no claim about it.

What the beef is actually giving you

Iron is the reason beef gets recommended, and the mechanism matters.

A review on dietary iron and food matrix effects sets out the fundamental split: dietary iron comes in two forms, heme, found in animal products and absorbed more efficiently, and non-heme, found in plant foods and less readily absorbed. Absorption of non-heme iron is influenced by dietary components that act as inhibitors or promoters.

So the same milligram of iron on a label is not the same milligram in your body, depending on where it came from and what it arrived with.

The review notes iron deficiency remains a global public health challenge, particularly among women, pregnant women and young children, and that inadequate intake is one contributor among others affecting absorption and utilisation.

A second review looks at beef specifically. It notes beef provides highly bioavailable heme iron along with vitamin B12, zinc, choline and creatine, nutrients implicated in neurotransmission, myelination and cortical function, and synthesises evidence on beef consumption, iron status and cognition showing improvements in attention, memory and visuospatial processing in young adult females.

The authors are careful and so am I. They state findings are mixed across studies, that current iron deficiency diagnostic thresholds have limitations, and that standardised cognitive assessments, longer interventions and comparative analyses of alternative protein sources are needed.

So: beef is a genuinely efficient delivery vehicle for several nutrients that are hard to get elsewhere. The cognitive claims are promising and unsettled.

Both sources are reviews rather than trials. The cognition review concerns young adult females specifically and describes mixed findings, and nothing here is medical advice or a recommendation about iron status, which belongs with a clinician.

Storage and swaps

Cooked steak keeps 3 days and is better cold and sliced thin than reheated. Reheating a steak is how you turn it grey.

The potatoes keep 3 days and crisp up again in a hot oven or air fryer.

Swap sirloin for rump, which is cheaper and takes marinating well, or for flank cooked fast and sliced very thin against the grain.

If you marinate, do it properly and for at least 30 minutes, since the marinade has a job beyond flavour.

Add a green vegetable. This is a two-component plate and it needs a third.

And rest the meat. Every minute you skip there costs you juice on the board.

The takeaway
