The Best Protein Bars

Protein bars hit their low sugar numbers using sugar alcohols. Researchers fed people that much every day for a week, and the results are a warning about the dose.

The straight answer, up front

Buy on protein per bar, on what is doing the sweetening, and on whether you will eat it. In that order.

A protein bar is a convenience product. It is not better than food, and it is not a supplement in any meaningful sense. It is a snack with the protein turned up, and its job is to be there when real food is not.

Judge it accordingly, and pay attention to the ingredient class that causes most of the complaints.

Sugar alcohols: the low-sugar number has a cost

Protein bars advertise low sugar. They usually achieve it with sugar alcohols such as erythritol and xylitol, which sweeten without contributing the same sugar.

Researchers ran a randomised controlled trial in 64 obese non-diabetic volunteers across Switzerland, Russia and Norway. Participants received 36 grams of erythritol per day, or 24 grams of xylitol per day, or nothing, for seven weeks. Glucose tolerance, metabolomic profile and gut microbiota composition were assessed at baseline and after.

The reason that trial exists is stated plainly in the paper: despite widespread use and a general perception of safety, human trials on their effects on metabolism and gut microbiota are notably absent.

So an ingredient class that is in a large share of the protein bars on the shelf has been studied in humans much less than its ubiquity suggests.

Those doses, 24 to 36 grams daily, are higher than a single bar delivers. But they are not absurd if bars are a daily habit and you also drink diet soft drinks and use sweetener in coffee. It adds up in a way nobody tracks.

The wider sweetener picture

A review evaluated the pharmacokinetics, metabolic effects and health outcomes of major low-calorie sweeteners.

Its conclusion is genuinely balanced, so I will represent it as such. Low-calorie sweeteners offer viable alternatives to sugar. Their health effects are context dependent and vary across different sweeteners and populations.

It also flags the concerns driving the research: potential long-term effects on metabolic health, glucose regulation, cardiovascular function and gut microbiota, with some agents linked to dysbiosis and glucose intolerance in the mechanisms it describes.

That is not a reason to panic about a protein bar. It is a reason to notice that the low-sugar claim is achieved by swapping one ingredient class for another whose long-term picture is still being worked out.

If bars consistently upset your stomach, sugar alcohols are the first thing to suspect, and switching to a bar sweetened differently is a cheap experiment.

Labels change when they are forced to

Here is a useful piece of context about the packaged food industry generally.

A cohort study used a staggered difference-in-differences design to examine whether adopting the 2016 revised US Nutrition Facts label, which emphasised calories and required added sugars to be reported, was associated with changes in nutrient content or serving size. It covered products across 15 food groups sold at a 185-store supermarket chain between 2016 and 2019, comparing brands that adopted the new label earlier against those that adopted later.

The premise is the interesting part: making manufacturers disclose something creates pressure to change the product.

What that means for you at the shelf is simple. The numbers manufacturers are required to print are the ones worth reading. The claims they choose to print on the front are marketing.

How I would actually choose

First, protein per bar. Twenty grams or more is doing a real job. Ten grams with a picture of a bodybuilder on it is a chocolate bar with ambitions.

Second, look at what provides the sweetness. If it is largely erythritol, xylitol or similar and bars upset your digestion, that is your likely culprit.

Third, cost per bar against what else you could eat. Greek yogurt, a tin of tuna, milk or leftovers usually beat a bar on both protein and price. The bar wins only on portability.

Fourth, whether you will actually eat it. A bar you find disgusting sits in a drawer, which delivers zero grams of protein.

Fifth, ignore the front of the wrapper entirely and read the panel on the back.

When a bar is the right answer

When the realistic alternative is nothing.

A long day, a commute, a gym bag, no fridge. A bar covers a protein gap that would otherwise stay open.

That is a genuine use and worth paying for. What it is not is a superior form of nutrition, and none of the evidence here suggests otherwise.
