Chicken and Chorizo Rice
Not paella, and I am not going to pretend otherwise. It is the weeknight relative, and the rule is that you do not stir it.
What this is
Chicken thighs and chorizo cooked with rice, peppers and paprika in one pan until the rice absorbs everything. Forty-five minutes, six servings.
It is not paella and I am not going to pretend it is. It is the weeknight relative of one, and it is very good.
The research below includes the least comfortable finding in this whole collection, and I have put it in rather than leaving it out.
Ingredients
For 6 servings
8 chicken thighs, bone-in and skin-on 150 g cooking chorizo, sliced 3 tbsp olive oil 1 onion, diced 1 red pepper, sliced 4 cloves garlic, minced 2 tsp smoked paprika 1 tsp dried oregano Pinch of saffron, optional 1 tin chopped tomatoes 350 g paella or short-grain rice 900 ml hot chicken stock Salt and black pepper
To finish 150 g frozen peas Parsley, chopped Lemon wedges
Method
1. Season the chicken and brown it skin-side down in the oil in a wide shallow pan, 8 minutes, until the skin is properly golden. Remove.
2. Fry the chorizo 3 minutes until it releases its red oil. That oil is the flavour base of the entire dish.
3. Add the onion and pepper, cook 8 minutes.
4. Add the garlic, paprika, oregano and saffron, 1 minute, then the tomatoes, and cook 5 minutes until thickened.
5. Stir in the rice to coat it in the oil.
6. Add the hot stock, stir once to level, then put the chicken back on top skin-side up.
7. Simmer uncovered, without stirring, for 20 minutes. Stirring releases starch and turns it into risotto, which is a different dish.
8. Scatter the peas over, cook 5 more minutes, then rest off the heat for 5 minutes covered.
9. Finish with parsley and lemon.
The chorizo, honestly
Chorizo is a cured processed meat, and there is a study that puts numbers on what that category contributes.
Researchers risk-assessed age-specific dietary intake of N-nitrosamines and their main dietary sources, using 671 validated food frequency questionnaires from 116 children followed from 6 months to 4 years and 182 adults aged 19 to 95 in northern Spain. Nitrate, nitrite and nitrosamine content was calculated per 100 g across 348 food items, primarily using EFSA and EPIC data, with intakes standardised by body weight.
N-nitrosamines are compounds associated with increased cancer risk, formed from nitrites used in curing.
The highest mean intake, mainly of N-nitrosodimethylamine, was observed at 48 months of age and was derived from processed meats.
Processed meats, named as the main source, in four-year-olds.
Among adults, nitrite intake was primarily attributable to animal sources, and 12 to 19 percent of individuals exceeded the acceptable daily intake. In children, margins of exposure below 10,000 were observed from 12 months through to 95 years of age.
A margin of exposure below 10,000 is the threshold at which regulators treat a genotoxic carcinogen as a priority for risk reduction. The authors note early childhood appears to be a particularly sensitive window.
I am not telling you not to eat chorizo. I am telling you why 150 g of it flavours six portions in this recipe rather than being the protein: it is used the way an anchovy or a stock cube is used, for its intensity.
This is a dietary exposure assessment in northern Spain using food frequency questionnaires and database values rather than measuring what individuals actually consumed. It models exposure and does not measure any health outcome. Regional diets differ, and food frequency questionnaires are an imprecise instrument.
Why the rice variety matters
A study on the specific problem of rice in a paella-style dish.
Researchers examined a japonica rice with intermediate amylose content, described as suitable for paella due to its ability to withstand cooking and absorb flavours, testing high-pressure processing at 400 and 600 MPa as a pretreatment before boiling or microwaving, and examining microstructure, pasting properties, cooking time and kinetics.
The phrase that explains the whole ingredient list: withstand cooking and absorb flavours. Amylose content is what determines whether a grain holds its shape in liquid or dissolves into starch.
The pretreatment did not change the pasting properties, but the typical polyhedral form of the rice starch granules was lost, especially at 600 MPa. Cooking times fell from 14 and 10 minutes to 8 and 6 minutes at 600 MPa for boiling and microwaving respectively. Rice pretreated at 400 MPa and microwaved had lower hardness and adhesiveness, linked to amylose release during cooking.
Cooking time nearly halved by physically damaging the starch granules before cooking.
Which is exactly why long-grain or basmati rice fails in this dish: different amylose content, different structure, and it does not absorb and hold the liquid the same way.
This tested high-pressure processing as an industrial pretreatment on one rice variety, measuring texture and cooking kinetics. It is cited for what it establishes about amylose and paella rice, not because you should pressurise your rice.
One thing about the whole dish
A study that analysed complete traditional recipes rather than single ingredients is worth repeating here, because this dish sits squarely in its scope.
Researchers characterised the total antioxidant capacity and phenolic profile of 56 traditional Mediterranean Diet recipes from eight countries, including Spain, with samples freeze-dried and subjected to extraction and acid hydrolysis, measured by TEAC, ORAC and total phenolics with profiles by HPLC-DAD.
Mediterranean recipes showed higher antioxidant capacity and greater phenolic diversity than non-Mediterranean ones, dominated by phenolic acids, secoiridoids and flavonoids, which the authors attribute to characteristic olive oil use.
And the finding worth carrying: in all regions the non-extractable fraction contributed more than 80 percent of total antioxidant capacity, which the authors describe as an underestimation by conventional measurement methods.
The non-extractable fraction is what stays bound to fibre and food structure. Most measurements miss it, which means most published figures understate what a complete cooked dish carries.
This measured antioxidant capacity in freeze-dried food using laboratory assays, not absorption or health outcomes in people, and the recipes tested were the researchers' versions rather than this one.
Storage and swaps
Keeps 3 days in the fridge. Cool it fast, within an hour, spread out rather than in a deep pot, and reheat once until piping hot throughout. Cooked rice has real food safety rules and they apply here.
Do not freeze it. The rice goes chalky.
Swap chicken thighs for drumsticks, or for rabbit, which is traditional.
Swap chorizo for smoked paprika alone plus a little extra oil if you would rather leave the processed meat out. You lose some depth and the dish still works.
Swap paella rice for arborio or bomba. Do not use basmati or long-grain.
Add prawns or mussels in the last 5 minutes.
And do not stir it after the stock goes in. That single instruction is what separates this from a pan of wet rice.
