Chickpea and Spinach Curry

Store cupboard to dinner in twenty-five minutes, no fresh shopping required. The kind of thing worth being able to make without a recipe.

What this is

Chickpeas simmered in a spiced tomato and coconut sauce with spinach folded through at the end. Twenty-five minutes from tins, six servings, and it costs almost nothing.

It is the meal I recommend to people who want to eat less meat without eating worse, because chickpeas do the job better than most substitutes.

There is also a finding here about tinned versus dried that goes against what people assume.

Ingredients

For 4 servings

2 tins chickpeas, about 800 g, drained and rinsed 200 g spinach, fresh or frozen 1 tin chopped tomatoes 200 ml coconut milk 1 large onion, diced 4 cloves garlic, minced 1 thumb ginger, minced 2 tbsp neutral oil or ghee

Spices 2 tsp ground cumin 2 tsp ground coriander 1 tsp ground turmeric 1 tsp garam masala 1 tsp freshly ground black pepper Half to 1 tsp chilli powder Salt

To serve: rice or flatbread, coriander, lime, yogurt

Method

1. Heat the oil in a wide pan. Cook the onion over medium heat for 10 minutes until soft and golden at the edges.

2. Add the garlic and ginger, cook 1 minute.

3. Add all the ground spices and stir for 45 seconds until they smell toasted. Keep the black pepper in with the turmeric.

4. Add the tomatoes and 100 ml water. Simmer 8 minutes until thickened and no longer raw-tasting.

5. Add the chickpeas and coconut milk. Simmer gently 10 minutes. Crush about a quarter of the chickpeas against the side of the pan with a spoon; this thickens the sauce and is the single best trick in this recipe.

6. Add the spinach and cook 2 minutes until wilted. If using frozen, squeeze it dry first.

7. Season, add lime juice, and finish with fresh coriander.

Why the tin is fine

Dried beans get treated as the serious option and tinned as the shortcut. There is a study that complicates that.

Researchers investigated raffinose family oligosaccharides in dry beans, the compounds responsible for the flatulence and digestive discomfort that limits the appeal of bean products. They surveyed a multi-environment trial of diverse varieties grown under irrigation, plus controlled heat treatment experiments to test the effect of moderate heat stress on accumulation during seed fill.

Two findings matter here.

First, there was substantial 1.7-fold variation in levels due to both genetic and environmental factors, with a significant increase when plants encountered stress events during seed fill.

So the beans you buy vary considerably in the compounds that cause discomfort, for reasons entirely outside your control, depending on variety and on the weather where they grew.

Second, and the reason this is in a recipe: the study's own title reports reduction of these compounds upon canning, and notes that processing steps such as soaking and canning are known to reduce levels.

The tin has already done a processing step for you. If beans cause you discomfort, tinned and thoroughly rinsed is a reasonable answer rather than a compromise.

What chickpeas actually deliver

Most of the review is actually about agriculture, covering how drought, heat, cold and salinity limit yield, along with breeding strategies and stress tolerance mechanisms. That is a reminder that a lot of food science is about growing the crop rather than eating it.

The coconut milk question

Coconut milk is high in saturated fat, and there is a review that takes on exactly what that means.

It critically reviewed the justification for the current focus on single nutrients, most notably a 10 percent cap on dietary saturated fat, and argues for a more holistic food-based approach.

The example it gives is telling. In the newly released Dietary Guidelines for Americans for 2025 to 2030, the recommendation to select low-fat dairy has been changed to allow full-fat dairy consumption, in recognition of evidence for health benefits despite high saturated fat content. But the 10 percent cap on total saturated fat has been maintained, which would require reducing it from other sources.

That is an internal tension in official guidance, stated plainly by researchers.

Their analysis shows considerable heterogeneity in the physiological and health effects of individual saturated fatty acids, and that the health effects of foods are determined by the food matrix rather than by single nutrients in isolation.

Different saturated fats behave differently, and the food they arrive in matters.

So 200 ml of coconut milk across four servings, in a dish full of legumes and vegetables, is not the thing to worry about. That is my conclusion from the review's argument rather than a statement it makes about coconut milk.

Storage and swaps

Keeps 4 days in the fridge and improves overnight. Freezes for 3 months, though the spinach softens further.

It thickens as it cools. Loosen with water when reheating.

Swap chickpeas for butter beans, cannellini or a mix. Lentils work but change the texture entirely.

Swap coconut milk for yogurt stirred in off the heat, which stops it splitting.

Add a handful of cashews or a spoon of peanut butter to the sauce for body.

And rinse the chickpeas properly. Given the section above, running them under cold water for a minute is worth the effort.
