Kimchi Tofu Stew
The jar of kimchi that has gone too sour to eat straight is exactly what this needs. Frying it before the liquid goes in is the whole dish.
What this is
Kimchi and soft tofu simmered into a red, sour, deeply savoury stew. Twenty-five minutes, four servings, one pot.
Older kimchi makes a better stew than fresh. The jar that has gone too sour to eat straight is exactly what you want here, which makes this the most useful recipe in the collection for anybody who buys kimchi with good intentions and forgets about it.
The research below is about what is actually in that jar, and it is more variable than the label suggests.
Ingredients
For 4 servings
300 g kimchi, well fermented, roughly chopped, plus 4 tbsp of its juice 400 g soft or silken tofu 2 tbsp neutral oil 1 onion, sliced 4 cloves garlic, minced 1 tbsp grated ginger 1 to 2 tbsp gochujang 1 tsp gochugaru, Korean chilli flakes, optional 1 tbsp soy sauce 1 tsp sugar 700 ml stock or water 1 tsp sesame oil
To finish 2 eggs, optional 3 spring onions, sliced Rice, to serve
Method
1. Heat the oil and cook the onion 5 minutes.
2. Add the garlic and ginger, 1 minute.
3. Add the chopped kimchi and fry it hard for 5 minutes. This step is not optional: frying the kimchi before liquid goes in is what turns it from sharp to deep, and skipping it gives you a thin sour soup.
4. Stir in the gochujang, gochugaru, soy and sugar, 1 minute.
5. Add the stock and the kimchi juice, bring to a simmer, cook 10 minutes.
6. Spoon in the tofu in large pieces. Do not stir it much or it breaks up. Simmer 5 minutes.
7. Crack the eggs into the surface if using and cover for 3 minutes until just set.
8. Finish with sesame oil off the heat and spring onions. Serve with rice.
Not all kimchi is the same product
A study compared traditional and commercial Korean fermented foods directly, and the difference is not marketing.
Researchers examined microbial community structure, Shannon diversity and pH changes across traditionally and commercially produced Korean fermented foods. Cabbage and radish kimchi were fermented for four weeks to track microbial succession and physicochemical change, with soy sauce, soybean paste, pepper paste, fruit vinegar, yogurt and aged kimchi compared by production method. Communities were analysed by amplicon sequencing of the V3-V4 regions of the bacterial 16S rRNA gene and the fungal ITS region.
Four weeks of tracking, bacteria and fungi both sequenced. This is a proper microbial census rather than a plate count.
The finding: traditionally produced cabbage kimchi showed high microbial diversity at the early fermentation stage, initially dominated by Weissella and Leuconostoc, then shifting gradually toward lactic acid bacteria dominance later.
Succession. The community changes as the jar ages, which is why kimchi tastes different at week one and week six, and why an old jar makes a better stew.
The comparison with commercially produced versions was the point of the study, and the two were not equivalent.
So if you are buying kimchi for the fermentation rather than the flavour, the production method matters, and the label rarely tells you. Look for it refrigerated, unpasteurised, and with a lid that is doing something.
This compared microbial communities and pH in Korean fermented foods. It did not test health outcomes, and higher microbial diversity in a jar is not a demonstrated benefit in a person.
How much fermented food people actually eat
A national survey put numbers on something usually discussed anecdotally.
Researchers assessed exposure to foods containing live microbes in the nationally representative INCA 3 dietary survey in France, assigning foods in the national composition database to low, medium or high live-microbe groups, then measuring diet quality by mean adequacy ratio, mean excess ratio and a national nutrition programme score.
Foods with medium or high levels of live microbes were consumed by 97.7 percent of children and 98.4 percent of adults.
Nearly everybody. Which reframes fermented food from a health trend into something almost universal.
The sources are the interesting part. Yogurt and unpasteurised cheese were the top sources of high live-microbe foods at 99 percent, while vegetables and fruit, particularly raw and unpeeled, were the top sources of medium ones at 75 percent.
Raw unpeeled vegetables counting as a live-microbe food is a detail most people would not guess, and it means the category is much broader than the fermented aisle.
This is a cross-sectional dietary survey in France, describing consumption patterns and diet quality associations. It cannot establish that live microbes cause better diet quality, and people who eat more of these foods differ in many other ways.
The tofu, and what soy actually has behind it
Tofu carries the protein in this dish, and the evidence base is stronger than for most plant proteins.
A systematic review of soy-derived bioactives describes soybeans as nutrient-dense legumes and a high-quality plant-based protein source containing all essential amino acids, with a protein content of 36 to 40 percent, which the authors state surpasses many other plant-derived proteins in nutritional value.
All essential amino acids. Soy is one of the few plant proteins where that is straightforwardly true, which is why it appears in this stew rather than a bean.
The review synthesises biochemical analyses, nutritional profiling and clinical trials on soy protein and its bioactive compounds across growth, metabolic health, immune function and disease prevention, with particular emphasis on food-insecure populations, and reports positive effects on hormonal regulation, cardiovascular health, cognitive function and immune support.
That is a broad list of claims, and breadth is usually a reason for caution rather than confidence.
The 36 to 40 percent protein figure is for the soybean, not for tofu. Tofu is mostly water, so a block delivers far less than that per 100 g, and soft tofu less again than firm.
This review covers soy-derived bioactives across a wide range of outcomes with emphasis on undernourished populations, so its conclusions do not transfer directly to a well-fed adult eating a stew. The composition figures describe soybeans rather than tofu.
Storage and swaps
Keeps 3 days in the fridge and improves overnight. The tofu breaks up on reheating, which is not a problem.
Freezes 2 months, though the tofu texture changes noticeably; frozen and thawed tofu goes spongy, which some people prefer.
One honest note on salt: kimchi, gochujang and soy sauce are all salty, so this is a high-sodium dish. Use water rather than stock, hold the soy back and taste at the end, and if you are watching sodium this is a dish to treat carefully.
Swap soft tofu for firm, cubed and added earlier, or leave the tofu out and add pork belly at step 1.
Swap gochujang for miso plus chilli if you cannot find it. Different, still good.
Add mushrooms, courgette or spinach in the last 5 minutes.
And use old kimchi. Fresh kimchi makes a stew that tastes like cabbage; three-week-old kimchi makes one that tastes like a meal.

Limits of this evidence
- The kimchi study compared microbial communities and pH. It did not test health outcomes, and higher diversity in a jar is not a demonstrated benefit in a person.
- The French survey is cross-sectional. It describes what people eat and cannot establish that live microbes cause better diet quality.
- The soy review covers a very broad set of claimed outcomes with emphasis on undernourished populations, so its conclusions do not transfer directly to a well-fed adult.
- The 36 to 40 percent protein figure describes soybeans, not tofu. Tofu is mostly water and soft tofu is more dilute than firm.
- This is a high-sodium dish. Kimchi, gochujang and soy sauce are all salty, and anybody managing sodium intake should treat it accordingly.
