Miso Salmon with Greens

Fifteen minutes of cooking, a marinade that does the work while you do nothing, and a glaze that will burn if you turn your back.

What this is

Salmon glazed with miso and grilled hard, served over greens cooked briefly in the same pan. Twenty minutes, and it looks like something you would pay for.

Miso is the most underused ingredient in a Western kitchen. One tub lasts months in the fridge and it turns almost anything savoury into something people ask about.

Ingredients

For 2 servings

2 salmon fillets, about 150 g each, skin on 300 g greens: pak choi, tenderstem broccoli, kale or cavolo nero

Glaze 2 tbsp white or red miso paste 1 tbsp mirin or honey 1 tbsp soy sauce 1 tsp sesame oil 1 tsp rice vinegar 1 clove garlic, grated 1 tsp grated ginger

1 tbsp neutral oil Sesame seeds and sliced spring onion to finish

Method

1. Whisk the glaze ingredients together until smooth. It should be spreadable, not runny; add a splash of water if the miso is stiff.

2. Pat the salmon dry and spread two thirds of the glaze over the flesh side. Leave 15 to 30 minutes if you have it.

3. Heat the grill or oven to 220C. Line a tray with foil, because miso burns onto trays permanently.

4. Grill the salmon 8 to 10 minutes without turning, until the glaze is bubbling and darkened at the edges and the fish flakes at the thickest point. Watch it from minute 7; the sugars in the glaze go from caramelised to burnt fast.

5. While it cooks, heat the oil in a pan and cook the greens over high heat for 2 to 3 minutes, until bright and just tender. Add a splash of water and cover for the last minute if they need it.

6. Toss the greens with the remaining glaze off the heat.

7. Serve the salmon on the greens with sesame seeds and spring onion.

What fermentation does to soy

This is the part worth understanding, because it applies to miso, tempeh and natto alike.

The critical detail: upon consumption, glucosinolates undergo hydrolysis by the enzyme myrosinase, producing bioactive compounds including isothiocyanates and indole glucosinolate degradation products.

An enzyme is required for the conversion. And enzymes are destroyed by heat.

That is the argument for cooking cruciferous greens briefly rather than boiling them into submission. Overcooking denatures myrosinase, and without it the glucosinolates pass through largely unconverted.

The review describes the resulting compounds as contributing to a range of health benefits including anti-cancer, anti-inflammatory and cardioprotective effects, with mechanisms including modulation of oxidative stress, inflammation and detoxification pathways.

Those are described mechanisms and potential rather than demonstrated clinical outcomes, and the review's own title uses the word potential. I am reporting the enzyme mechanism as the practical point, because that is what changes your cooking, and treating the health claims as the open question they are.

On the salt

Miso is salty and that deserves stating rather than hiding.

Two tablespoons of miso across two servings, plus a tablespoon of soy sauce, is a meaningful amount of sodium. This dish needs no additional salt anywhere, which is why none appears in the ingredient list.

If you are watching sodium intake for any reason, use white miso rather than red, which is milder and generally lower in salt, halve the soy sauce, and lean on the vinegar, ginger and garlic for flavour instead.

Storage and swaps

The glaze keeps 2 weeks in a jar in the fridge and works on chicken thighs, aubergine, tofu and mushrooms. Make double.

The cooked salmon keeps 2 days and is good cold, flaked over rice or salad.

Swap salmon for mackerel, cod or chicken thighs. Chicken needs longer, about 20 minutes at the same temperature.

Swap the greens for whatever cruciferous vegetable you have. Given the section above, brief cooking matters more than which one.

Use white miso if you are new to it. Red is stronger and easier to overdo.

And line the tray. This is not a cleaning tip, it is the difference between enjoying the meal and scrubbing for twenty minutes.
