Prawn and Garlic Pasta
Fifteen minutes, six ingredients, and the prawns need less time than you want to give them. Overcook them and there is no coming back.

Prawns, garlic, chilli, olive oil and pasta. Fifteen minutes, five ingredients that matter, and no way to hide a mistake.
It is the dish I cook when there is nothing in the house, because prawns come out of the freezer and everything else is a cupboard staple.
The research below covers the two things people ask about: whether pasta at night is a problem, and how to handle the garlic so it does what it is supposed to.
Ingredients
For 2 servings
300 g raw prawns, peeled, thawed if frozen 200 g linguine or spaghetti 6 cloves garlic, thinly sliced 4 tbsp good olive oil 1 tsp chilli flakes Zest and juice of 1 lemon Large handful flat parsley, chopped Salt and black pepper
Optional: 100 ml white wine, a knob of butter, cherry tomatoes, rocket
Method
1. Get a large pan of water boiling and salt it properly. Cook the pasta to al dente, which means checking two minutes before the packet says.
2. While it cooks, pat the prawns completely dry. Wet prawns steam and go grey.
3. Heat the olive oil in a wide pan over MEDIUM heat, not high. Add the sliced garlic and chilli and cook gently for 2 minutes until the garlic is pale gold and fragrant. Burnt garlic is bitter and there is no recovering the dish from it.
4. Turn the heat up, add the prawns in a single layer, and cook 60 to 90 seconds a side until just pink and opaque. They keep cooking after the pan comes off. Overcooked prawns are rubber.
5. Add the wine if using and let it bubble for a minute.
6. Reserve a cup of pasta water, then drain and add the pasta to the prawn pan with a splash of that water. Toss hard for 30 seconds; the starch in the water is what makes the sauce cling.
7. Off the heat, add lemon zest, juice, parsley and a final glug of olive oil. Toss again and serve.
Pasta at night
This is the question I get asked most, and there is a study that put it to a direct test.
A prospective observational study involved 33 patients with impaired glucose tolerance or type 2 diabetes. Over a one-week free-living period, participants completed seven standardised meal tests: glucose solutions at breakfast, lunch and dinner, plus steamed bread, rice, noodles and oats at lunch. Linear mixed-effects models compared postprandial glycemic responses by meal timing and by staple food type.
Meal timing had no significant effect on postprandial glycemic response at 120 minutes, with a time effect p value of 0.110, or at 180 minutes, at 0.097.
Neither figure reached significance. In this study, the same glucose load at breakfast, lunch or dinner did not produce a significantly different response by time of day.
That is not a licence to eat anything at any hour, and it is one pilot study in a clinical population. But it is a direct measurement of a claim that gets repeated constantly, and the claim did not hold here.
The study also found HOMA-IR, a measure of insulin resistance, was positively associated with inter-individual variation, which is the more useful finding: how you respond depends more on you than on the clock.
Thirty-three patients with impaired glucose tolerance or type 2 diabetes, described by its authors as a pilot study. This is a clinical population and nothing here is medical advice; if you are managing blood glucose, that belongs with your clinician rather than a recipe.
How you handle the garlic changes what it is
This section is why the method says slice, and cook gently.
A review analysed the mechanisms behind the formation of sulfur-containing flavour compounds in garlic, and the factors influencing them across preprocessing, meaning genotype, environment, cultivation and storage, and processing, meaning thermal treatment, fermentation and curing.
The central point is stated plainly: these sulfur-containing compounds contribute garlic's unique flavour and function as important bioactive components, but they are chemically unstable and are affected by a range of factors, leading to variations in garlic flavour and quality.
Chemically unstable. That single phrase explains why garlic behaves so differently depending on what you do to it, and why hard heat destroys it.
A second review adds detail on the pathway. The major organosulfur compounds originate from a precursor called alliin and form through enzymatic and chemical pathways. It compares single-clove and multiple-clove garlic and finds consistently higher concentrations of key bioactives including allicin and phenolics in single-clove garlic, with stronger antioxidant capacity and superior antibacterial effects, while multiple-clove garlic showed more sustained effects in lipid modulation and broader antifungal activity.
It also confirms that preharvest factors and post-harvest conditions including processing, storage and curing significantly influence garlic's organosulfur and phenolic content.
So the garlic in your kitchen is not a fixed quantity. Its compounds form through an enzymatic reaction after the clove is cut, and they degrade with heat.
The practical version: slice or crush it rather than using it whole, give it a moment before it hits the pan, and cook it gently to pale gold rather than brown.
Both are reviews of garlic chemistry and its bioactive properties, not trials of health outcomes in people, and the antibacterial and antioxidant findings described are laboratory properties. The cooking advice here follows from the chemistry rather than from a tested cooking protocol.
Storage and swaps
This does not keep. Pasta with a light oil sauce is a today dish; refrigerated and reheated it becomes something else entirely.
Buy frozen raw prawns rather than cooked ones. Cooked prawns reheated in a hot pan go rubbery, and frozen raw prawns thaw in cold water in ten minutes.
Swap prawns for scallops, squid cut into rings, or a tin of good tuna stirred through at the end.
Swap pasta for linguine, spaghetti or fettuccine. Short shapes work less well because there is not enough sauce to catch.
Add cherry tomatoes halved and cooked with the garlic, or a handful of rocket wilted in at the end.
And salt the pasta water properly. It is the only chance you get to season the pasta itself.
Cook the garlic gently to pale gold, not brown: garlic's sulfur compounds are described in the literature as chemically unstable and heavily affected by processing, so hard heat destroys the thing you added it for. Pat the prawns dry and give them 60 to 90 seconds a side, no more. Use the starchy pasta water to bind the sauce. And on eating pasta at night, a study of 33 patients running seven standardised meal tests found meal timing had no significant effect on postprandial glucose at 120 or 180 minutes, with individual insulin resistance mattering more than the hour. Two servings, eat it fresh.
