Prawn Laksa
A coconut and chilli broth worth making from scratch on a cold evening. Fry the paste for the full five minutes; that is where the flavour lives.
What this is
Prawns and rice noodles in a coconut and chilli broth. Thirty minutes, four servings, and it is the best thing in this collection for a cold evening.
It uses a tin of full-fat coconut milk and I am not going to apologise for that, but I am going to show you the argument that surrounds it, because it is genuinely unresolved.
The research below covers the coconut milk, the chilli and the noodles.
Ingredients
For 4 servings
400 g raw prawns, peeled, tails on 200 g rice noodles, flat or vermicelli 1 tin full-fat coconut milk, 400 ml 600 ml chicken or fish stock 3 tbsp laksa paste, or see below 1 tbsp neutral oil 1 tbsp fish sauce 1 tsp sugar Juice of 1 lime
If making the paste 4 shallots, 4 cloves garlic, 2 lemongrass stalks (white part), 3 dried chillies soaked, 1 tbsp grated ginger or galangal, 1 tsp ground coriander, 1 tsp turmeric, 2 tsp shrimp paste
To serve 200 g beansprouts 2 boiled eggs, halved Coriander, mint, sliced chilli Fried shallots Lime wedges
Method
1. If making the paste, blend everything to a smooth paste with a splash of water.
2. Fry the paste in the oil over medium heat for 5 full minutes, until it darkens and the oil separates out around the edges. This step is the entire dish. An underfried paste tastes raw and harsh no matter what you do afterwards.
3. Add the thick cream from the top of the coconut milk tin and cook 2 minutes until it splits slightly and goes glossy.
4. Add the rest of the coconut milk and the stock, bring to a gentle simmer, cook 10 minutes.
5. Season with fish sauce and sugar. Taste. It should be salty, sweet, hot and sour in roughly that order.
6. Soak or cook the noodles separately according to the packet and divide between bowls.
7. Add the prawns to the broth and cook 2 to 3 minutes, until just pink. They keep cooking in the hot broth, so undercook them slightly.
8. Ladle over the noodles, top with beansprouts, egg, herbs, chilli and fried shallots, and squeeze lime over at the table.
The coconut milk argument
Coconut milk is high in saturated fat, and a review argues the framework everybody uses to judge that is the wrong one.
The authors critically reviewed the justification for the current focus on single nutrients, most notably the 10 percent cap on dietary saturated fat intake, and argue for a more holistic food-based approach.
They point to a change already made: in the Dietary Guidelines for Americans 2025 to 2030, the recommendation to select low-fat dairy has been changed to allow full-fat dairy, in recognition of evidence for health benefits despite the saturated fat content. The 10 percent overall cap, however, was retained, which as the authors note would require cutting saturated fat from other sources instead.
That is an inconsistency in official guidance, stated plainly, and it is why this remains an argument rather than a settled matter.
Their analysis reports considerable heterogeneity in the physiological and health effects of individual saturated fatty acids, and concludes that the health effects of foods are determined by the food matrix and overall nutrient profile rather than their saturated fatty acid content.
Food matrix means the whole structure a nutrient arrives in. The claim is that a tin of coconut milk, a block of cheese and a fried snack are not interchangeable simply because a number on a label matches.
They conclude the 10 percent cap should be replaced by food-based dietary guidelines.
I am giving you this argument, not endorsing it. This is a critical review presenting a position, and it disagrees with guidance still in force in most countries. Reviews arguing for a change in guidelines are one voice in an ongoing debate, not a settled conclusion, and anybody managing cholesterol or cardiovascular risk should follow their clinician rather than an article.
The chilli, tested on people who train
Capsaicin gets a lot of loose claims attached to it. Here is a trial that actually measured something.
Fifty trained athletes, half of them women, took either 2.5 mg of phenylcapsaicin or a placebo 45 minutes before a standardised training session, in a randomised, triple-blind, placebo-controlled crossover design. The session included a warm-up, a weightlifting block and a conditioning workout, with countermovement jump before and after, a deep squat at 70 percent of one-rep max afterwards, and heart rate, capillary lactate, perceived exertion and perceived recovery monitored throughout. Muscle soreness was assessed at 24 and 48 hours.
Triple-blind, placebo-controlled, crossover, fifty participants with an even sex split. That is a well-built trial.
Against placebo, the capsaicin improved squat performance at 70 percent of one-rep max in both load and repetitions, and attenuated the decline in countermovement jump. Soreness was significantly lower at both 24 and 48 hours.
And the results that did not appear: no differences during the conditioning workout, and no group differences in lactate, perceived exertion, perceived recovery or heart rate.
So it moved some strength measures and soreness, and did not move the physiological markers or the metabolic conditioning work. Reporting both is what makes the trial trustworthy.
This used a 2.5 mg dose of a specific purified capsaicin analogue taken as a supplement 45 minutes before training, not chilli in a bowl of soup. The dose, the compound and the timing are all different from eating this dish, and nothing here suggests laksa improves your squat.
Rice noodles and what changes their glycemic response
A study on noodle formulation with an unusually complete method chain.
Researchers incorporated chestnut starch-resveratrol complexes into extruded fresh noodles and evaluated quality, structure, digestibility and glycemic response, comparing against commercial wheat-based noodles.
The complexed noodles showed better cooking stability with lower swelling and leaching, improved hardness, chewiness and tensile strength, and much less colour change after cooking. Structural analysis by electron microscopy, FTIR and X-ray diffraction indicated a more compact and ordered network, with relative crystallinity of cooked noodles at about 30.8 percent.
In in vitro digestion the complexed noodles showed the lowest starch hydrolysis at 180 minutes, 45.92 percent, and a predicted glycemic index of 53.35 against 70.65 for the commercial comparison. Gavage studies in mice confirmed the lowest postprandial blood glucose increment, 4.31 mmol/L, and molecular dynamics simulations suggested resveratrol could competitively occupy the alpha-amylase binding cavity and reduce starch accessibility.
In vitro digestion, then animals, then a simulation of the mechanism. Three independent lines pointing the same way is much more convincing than any one of them.
What transfers to your bowl is the principle rather than the product: what a starch is bound to, and how ordered its structure is, changes how fast it digests. Polyphenols in the same dish are not only flavour.
This tested an engineered functional ingredient in extruded noodles, with in vitro digestion and mouse studies rather than human trials. Rice noodles in a laksa are a different product entirely, and no human glycemic outcome was measured.
Storage and swaps
The broth keeps 3 days in the fridge and freezes for 2 months. Prawns and noodles do not, so store them separately and assemble per bowl.
Never reheat cooked prawns twice. They go to rubber and it is not worth it.
Cook noodles to order. Rice noodles sitting in hot broth turn to paste within twenty minutes.
Swap prawns for chicken thigh poached in the broth, firm tofu, or a mix of fish and shellfish.
Swap laksa paste for red Thai curry paste plus a teaspoon of turmeric. Different dish, still excellent.
Use full-fat coconut milk. The reduced-fat version splits, tastes thin, and the fat is what carries the aromatics from the paste through the broth.
And fry the paste for the full five minutes. Every disappointing laksa is an underfried one.

And noodle research shows what a starch is bound to changes how fast it digests.
