Quinoa Tabbouleh with Halloumi
Real tabbouleh is a herb salad with a little grain in it, not the other way round. The proportions here will look wrong and they are correct.

The research below explains the halloumi trick, which is genuine food chemistry, and it gives the herbs more credit than they usually get.
Ingredients
For 4 servings
150 g quinoa, dry 250 g block halloumi, sliced 1 cm thick 1 tbsp olive oil for frying
Salad 2 large bunches flat parsley, about 100 g, finely chopped 1 bunch mint, about 30 g, finely chopped 4 tomatoes, deseeded and diced small 4 spring onions, sliced thinly Half a cucumber, diced small
Dressing 5 tbsp olive oil Juice of 2 lemons 1 clove garlic, crushed Half tsp ground allspice Salt and black pepper
To serve: lemon wedges, flatbread
Method
1. Rinse the quinoa thoroughly in a sieve under cold water for a full minute. This removes the saponins on the outside of the grain, which are bitter. Do not skip it.
2. Simmer in plenty of water for 12 to 14 minutes until the germ separates into a little tail. Drain and spread out to cool and dry.
3. Chop the herbs by hand with a sharp knife. A food processor bruises them into a paste and turns the salad dark.
4. Deseed the tomatoes. The seeds and their liquid make the salad watery within an hour.
5. Combine everything except the halloumi with the dressing, and taste. It should be sharp.
6. Fry the halloumi in a dry or barely oiled hot pan, 2 minutes a side, until deeply golden. Do not move it while it colours.
7. Serve immediately with the halloumi on top, while it is still squeaky.
Why halloumi does not melt
Most cheese collapses in a hot pan. Halloumi does not, and a study worked out precisely why.
Researchers investigated the impact of pH on the microstructure, rheological and functional properties of halloumi-type cheese made from cow milk.
The headline result is a threshold: the optimal pH for non-melting during frying and ideal oil release was above 6.41 or below 4.69.
Two windows, one high and one low, with a melting zone in between. That is a specific and useful number.
The mechanism is calcium. As pH dropped from 6.53 to 5.33, colloidal calcium phosphate dissolved, weakening the protein network through electrostatic repulsion, which decreased storage modulus, increased melt flow and enhanced free oil release. Lowering pH to 5.33 also cut calcium content by 89.4 percent while increasing water-holding capacity by 16.7 percent.
Nearly ninety percent of the calcium gone with a modest pH shift. That is the protein scaffolding dissolving, and a cheese without it flows when heated.
Below pH 4.69 the picture reverses: hydrophobic interactions and hydrogen bonding strengthen, increasing gel strength and reducing melt flow and oil release. Microstructure showed larger pores and fat aggregation at low pH, with FTIR confirming altered protein interactions.
So halloumi's squeak is a manufacturing decision, and the cheese either holds or fails depending on where it sits relative to those two numbers.
This studied halloumi-type cheese produced from cow milk under controlled conditions, measuring structure and function rather than nutrition or health. Traditional halloumi is often made with sheep and goat milk, which behaves differently.
What processing does to quinoa
Quinoa is the grain people reach for when they want a complete protein, and one study states that plainly before doing anything else: quinoa contains all the essential amino acids for human nutrition, and is gluten-free.
All of them. That is rare in a plant and it is the reason quinoa is in this bowl rather than couscous.
The study itself germinated black, red, white and grey quinoa to brew beer, investigating how germination as a bioprocess affects the nutritional profile, anti-nutrients and flavour.
Beer. I am aware. Stay with it, because the anti-nutrient finding is the useful part.
Optimal germination time was 48 hours. Germination significantly increased polyphenols, to 255.9 mg per litre in the white quinoa beer, and flavonoids, to 404.34 mg per litre in the red, which raised antioxidant activity. Protein and gamma-aminobutyric acid levels both rose.
And the finding that matters here: germination markedly improved potential nutritional accessibility by reducing anti-nutritional factors including phytic acid, tannins and trypsin inhibitor.
Those three are the same compounds that limit mineral absorption in every seed and legume. Sprouting reduces them, which is why sprouted grains are a category at all.
What this does not cover is saponins, the bitter coating on raw quinoa that step 1 tells you to rinse off. That instruction is standard preparation practice rather than a finding of this study, and it is about taste more than anything else.
This study germinated quinoa for brewing and measured beer composition. It is cited for its statement on quinoa's amino acid completeness and for what germination does to anti-nutrients, not as evidence about a bowl of boiled quinoa, which is not germinated at all.
The herbs are a real ingredient
This salad is mostly parsley and mint, which most people treat as decoration. A study measured what herbs and spices actually contribute.
Researchers measured total polyphenol consumption from herbs and spices in 212 adults using a validated online questionnaire, with respondents reporting frequency and amount for 27 herbs and spices over the past month, and concentrations calculated using the Phenol-Explorer database.
The study exists because of a gap the authors name: observational studies have quantified polyphenol intake from foods and beverages but not from herbs and spices, so their contribution has been unclear.
Respondents reported median monthly intakes of 679.92 mg of total polyphenols from 47.44 g of herbs and spices. Cinnamon, black pepper and cloves were the largest contributors.
Forty-seven grams a month, across all herbs and spices combined. This recipe contains 130 g of fresh herbs in a single bowl.
That comparison is the point. Treated as a garnish, herbs contribute very little. Treated as the main ingredient, as tabbouleh does, they are a different order of magnitude.

Storage and swaps
The salad keeps 2 days undressed, and about 4 hours dressed before the herbs go dark and the tomatoes weep.
Fry the halloumi to order. Cold fried halloumi is rubber and reheating does not save it.
Cooked quinoa keeps 4 days and freezes well, so cook a big batch.
Swap quinoa for the traditional bulgur, or for couscous, freekeh or cracked wheat.
Swap halloumi for feta crumbled over, or for grilled chicken or chickpeas.
Double the herbs if you are unsure. It is very difficult to overdo them in this dish and very easy to underdo them.
And deseed the tomatoes. Ten seconds each, and it is the difference between a salad and a puddle.
