Roast Chicken Traybake
One tray, one chicken, everything else cooked in the fat that comes off it. Sunday food with Tuesday effort.
What this is
Chicken thighs roasted on a tray with root vegetables and herbs. One dish, forty minutes, almost no attention required.
It is the meal I make on a Sunday when I want leftovers, and the format is endlessly adaptable.
The research here is unusually specific about cooking method and about the skin question, and it does not give the tidy answer people want.
Ingredients
For 4 servings
8 chicken thighs, bone in and skin on 600 g potatoes, cut into chunks 3 carrots, thick batons 2 red onions, cut into wedges 1 head garlic, halved across 3 tbsp olive oil 2 sprigs rosemary 4 sprigs thyme 1 lemon, halved Salt and black pepper
Optional: fennel, parsnip, cherry tomatoes added late, olives
Method
1. Heat the oven to 200C.
2. Toss the potatoes, carrots and onions with 2 tbsp of the oil, salt and pepper, and spread on a large tray in a single layer. Crowding steams them.
3. Roast 15 minutes on their own to give them a head start.
4. Meanwhile pat the chicken thighs completely dry and season both sides generously. Dry skin is the only route to crisp skin.
5. Nestle the thighs among the vegetables, skin side up. Rub the remaining oil over the skin. Add the garlic halves, herbs and lemon halves cut side down.
6. Roast 35 to 40 minutes until the skin is browned and the juices run clear at the thickest part of the thigh.
7. Squeeze the roasted lemon over everything and rest 5 minutes before serving.
Do not cover it at any point. Steam is the enemy of the whole dish.
Why roast rather than grill or fry
There is a study that compared four cooking methods on the same meat and measured what survived.
Researchers examined water bath cooking, convection oven roasting, grilling and pan frying on the content and retention of vitamins A, D, E and K, plus cholesterol, in goose breast meat with and without skin, measured by high-performance liquid chromatography. Cooking loss, retention, and the percentage of adult nutrient reference values covered by a 100 g portion were all calculated.
Grilling and pan frying produced the greatest reductions in vitamins A, D, E and K compared with raw meat.
The highest retention, above 52 percent, came from water bath cooking, the gentlest method tested.
So the pattern runs the way you would expect: the more aggressive and direct the heat, the more fat-soluble vitamins are lost. Oven roasting sits between the gentle bath and the harsh grill, which is a reasonable place to be when you also want the meat to taste of something.
On the skin, that study found cooking loss was higher with skin on, at 43.2 percent against 37.1 percent skinless, while the contents of vitamins A, D, E, K and cholesterol were all significantly greater in meat with skin.
This studied goose breast rather than chicken thighs, in a controlled laboratory setting with 36 samples. Goose is a fattier bird than chicken and fat-soluble vitamins travel with fat, so the absolute figures do not transfer. The ranking of cooking methods by how much they destroy is what carries.
The skin question has no clean answer
A companion study looked at B vitamins across the same four methods and the same skin comparison, and the result is genuinely split.
Significantly lower thermal losses were found in skinless meat. That meat also contained significantly more niacin, nicotinamide and vitamin B6.
But meat with skin contained more thiamine monophosphate, nicotinic acid, pyridoxal, pyridoxine and vitamin B12.
Read that twice. Skinless won on some B vitamins. Skin on won on others. Within the same study, on the same birds, measured the same way.
Heat treatment technique also significantly affected the total content of thiamine, riboflavin, nicotinic acid and vitamin B6, so the method and the skin interact rather than acting independently.
That is what real data usually looks like, and it is why I am not going to tell you to remove the skin for your health or keep it for your nutrients. Both positions can cite this study.
What I will say is that the skin is what makes roast chicken worth eating, and this recipe keeps it.
Again, goose breast rather than chicken thigh, 36 samples, laboratory conditions. It establishes that the skin changes the nutrient profile in both directions rather than telling you what to do about it.
The herbs are doing more than smelling nice
Rosemary and thyme on a roasting tray is tradition. There is a research field behind it.
A review summarised advances in applying medicinal plant extracts as natural antioxidants, antimicrobials and colour-preserving agents in the meat industry, searching PubMed and Lens with a bibliometric analysis to identify trends.
The driver is stated plainly: there is growing interest from researchers, industry and consumers in reducing or eliminating synthetic preservatives such as nitrites in meat products, and medicinal plants have emerged as promising sources of natural compounds with multifunctional roles.
The review gives particular attention to phytochemical composition, bioactivity, and the practical application of selected plants that have demonstrated efficacy in preserving oxidative stability and microbial safety in meat.
Oxidative stability is the technical term for meat not going rancid, and herbs are being studied as a genuine industrial alternative to synthetic preservatives for exactly that job.
So the rosemary on your tray belongs to the same category of compound that food manufacturers are investigating to replace nitrites. That is a more interesting reason to add it than aroma alone.
This review concerns extracts applied in industrial meat processing at controlled concentrations, not sprigs of herbs on a domestic roasting tray, and it addresses preservation and shelf life rather than any health outcome from eating them.
Storage and swaps
Keeps 3 days. The chicken is good cold; the vegetables need a hot oven or air fryer to come back rather than a microwave.
Strip the meat from any leftover bones and keep the carcass for stock. It is twenty minutes of work for a litre of something you would otherwise buy.
Swap thighs for drumsticks or a whole spatchcocked chicken, which cooks in about 45 minutes at the same temperature.
Swap the vegetables for whatever is in season. Dense roots go on early, softer things like courgette or tomatoes go in for the last 15 minutes.
Add a tin of drained chickpeas for the final 20 minutes. They crisp at the edges and stretch the meal.
And use a big enough tray. Two trays beat one crowded one, every time.
Roast rather than grill or fry, and never cover it. In a four-method comparison, grilling and pan frying produced the greatest reductions in vitamins A, D, E and K, with the highest retention above 52 percent coming from the gentlest method. On the skin, the honest answer is that it cuts both ways: skinless meat had lower thermal losses and more niacin and B6, while meat with skin carried more B12, thiamine monophosphate and the fat-soluble vitamins, alongside higher cooking loss. Dry the skin properly, give the vegetables a 15 minute head start, and use a big enough tray. Four servings, keeps 3 days.
Limits of this evidence
- Both cooking studies used goose breast rather than chicken thigh, and goose is a considerably fattier bird, so absolute vitamin figures do not transfer.
- Those studies used 36 samples under controlled laboratory heat treatments rather than a domestic oven with vegetables in the tray.
