The best-looking thing you can make in twenty minutes. It also carries one real safety instruction, and it is about the fish, not the rice.

What this is

Raw salmon over seasoned rice with edamame, cucumber, avocado and a soy dressing. Fifteen minutes, no cooking except the rice.

It is the best-looking thing you can make at home in under twenty minutes, and it is also the one recipe in this collection with a genuine safety instruction attached rather than a nutritional one.

Read the fish section before you make it. I am not going to bury that.

Ingredients

For 2 servings

250 g sashimi-grade salmon, previously frozen, cubed 200 g sushi rice, dry weight 2 tbsp rice vinegar 1 tsp sugar Half tsp salt

100 g frozen edamame, cooked and podded 1 avocado, sliced Half cucumber, diced 2 spring onions, sliced 1 sheet nori, cut into strips 1 tbsp sesame seeds

Dressing 2 tbsp soy sauce 1 tbsp rice vinegar 1 tsp sesame oil 1 tsp honey 1 tsp grated ginger Optional: sriracha, kewpie mayonnaise

Method

1. Cook the sushi rice, then fold through the vinegar, sugar and salt while it is still warm. Let it cool to room temperature. Do not refrigerate it hard; cold rice goes stiff.

2. Check your salmon is safe for raw consumption. See below.

3. Cube the salmon into 2 cm pieces with a sharp knife, cutting against the grain of the flesh.

4. Whisk the dressing and toss half of it through the salmon. Leave 10 minutes, no longer. The acid starts to cure it and the texture changes.

5. Build the bowl: rice at the base, then the salmon, edamame, cucumber and avocado in sections rather than mixed.

6. Add the nori, sesame seeds and spring onion, then the remaining dressing.

7. Eat immediately.

The fish, and why freezing is not optional

This is the part of the recipe that matters more than any nutrition claim in it.

A study on parasite control in raw fish opens with the reason: increasing consumption of raw and minimally processed fish products has raised concerns about anisakiasis, the infection caused by ingesting larvae of the Anisakis genus.

And then the sentence that governs this recipe: freezing is currently the standard control measure.

The study exists because researchers are exploring alternative non-thermal technologies, in this case high-pressure processing, to preserve product quality while ensuring safety. They note that limited information is available about the minimum effective pressure required to achieve complete inactivation of Anisakis larvae while maintaining fillet quality.

Read that carefully. The alternatives to freezing are an active research question with incomplete answers. Freezing is the method that works.

So: buy fish that is explicitly sold for raw consumption, and understand that in most jurisdictions this means it has been commercially frozen to a specified temperature for a specified time. If you are buying fresh fillet from a counter and it has not been frozen, freeze it yourself at the coldest setting your freezer manages, for at least several days, before eating it raw.

If you are pregnant, immunocompromised, elderly or feeding young children, the standard advice is not to eat raw fish at all. That guidance comes from your health authority, not from me, and it overrides this recipe.

The seaweed is not decoration either

The nori strips carry something worth knowing about, in both directions.

A study evaluated Scottish seaweed species, quantifying key micronutrients and estimating their contribution to dietary intakes, while also determining heavy metal and iodine concentrations to assess consumer exposure risk. Eleven wild species from the north coast plus two farmed species from the west coast were analysed.

The interest is real: seaweeds are described as nutrient-dense with a rich content of soluble fibre and bioactives, with growing interest in addressing micronutrient insufficiencies, particularly in plant-based diets where traditional sources of certain micronutrients are limited. Vitamin B12 is one they specifically quantified.

But the study was designed with the risk in mind, not only the benefit. It investigated practical mitigation strategies to reduce iodine and heavy metal levels, with the objective of delivering seaweed products that are both safe and aligned with dietary guidelines.

Iodine is the one to know about. Seaweed can carry a great deal of it, and unlike most nutrients more is not better. A sheet of nori in a poke bowl is a small amount. Eating seaweed daily in quantity is a different exposure, and thyroid conditions make it a conversation for your doctor.

This analysed Scottish wild and farmed species, not the nori sold in Japanese food shops, and iodine content varies enormously between species. It measured composition and exposure risk rather than health outcomes.

Why the rice gets vinegar

Seasoning the rice with vinegar is traditional. There is an observational finding that makes it slightly more interesting.

A study analysed dietary data from 12,074 Japanese adults aged 20 to 69, collected via a food-tracking app, examining associations between acetic acid intake and other nutrients, with regressions adjusted for age, sex and total energy intake.

Acetic acid is the acid in vinegar.

The conclusion: individuals with higher acetic acid intake tended to consume fewer carbohydrates and saturated fats, even at equivalent energy intake.

Even at equivalent energy intake is the part that matters, because it means the association is not simply that people eating less food ate less of everything.

What it does not mean is that vinegar changes what you eat. This is dietary pattern data: people who use more vinegar are people who cook in a particular way, and that way involves fewer refined carbohydrates and less saturated fat. The vinegar is a marker of the pattern, not necessarily a cause of it.

Twelve thousand adults is a substantial sample, and it is still self-reported app data from a single country, cross-sectional, and cannot establish causation.

Storage and swaps

Do not store this. Raw fish assembled into a bowl is a same-hour dish, and leftovers are not worth the risk or the texture.

The rice can be made a few hours ahead and kept at room temperature covered, which is how sushi restaurants handle it.

Swap salmon for sashimi-grade tuna, or skip raw fish entirely and use cooked prawns, seared salmon, or crisped tofu. The bowl works without anything raw in it.

Swap sushi rice for brown rice or quinoa. The texture is different and the dish is still good.

Add anything crunchy: radish, carrot ribbons, pickled ginger, crispy onions.

And cube the fish with a genuinely sharp knife. A blunt knife tears salmon rather than cutting it, and the difference is visible on the plate.

The takeaway
