Sweet Potato and Black Bean Chilli

A chilli with no meat in it that nobody at the table will complain about. The chocolate is not a gimmick.

What this is

Sweet potato and black beans in a smoky, spiced tomato base. Forty minutes, six servings, no meat and no apology for it.

It is the meat-free dish I make for people who say they do not like meat-free dishes, because the sweet potato gives it body and the smoked paprika does the work bacon usually does.

The research below includes one number that reframes how much anybody actually knows about vegetables.

Ingredients

For 6 servings

2 large sweet potatoes, about 700 g, cubed with skin on 2 tins black beans, drained and rinsed 2 tins chopped tomatoes 1 large onion, diced 1 red pepper, diced 4 cloves garlic, minced 2 tbsp tomato puree 2 tbsp olive oil 300 ml vegetable stock

Spices 2 tsp smoked paprika 2 tsp ground cumin 1 tsp ground coriander 1 tsp dried oregano 1 tsp cocoa powder Half to 1 tsp chipotle or chilli powder Salt and black pepper

To serve: rice, yogurt or soured cream, lime, coriander, avocado

Method

1. Heat the oil in a large pot. Cook the onion and pepper 10 minutes until soft.

2. Add the garlic, all the spices and the tomato puree. Stir 1 minute.

3. Add the sweet potato and turn it through the spice base so every piece is coated.

4. Add the tomatoes and stock. Bring to a simmer.

5. Cook uncovered 20 minutes, until the sweet potato is tender but still holding its shape. Stir gently; over-stirring turns it to mush.

6. Add the black beans and cook a further 10 minutes.

7. Season properly at the end and add lime juice. Sweet potato needs acid or the whole pot tastes flat and sweet.

8. Serve with yogurt and coriander.

Leave the skin on the sweet potato. It holds the cubes together during the simmer, and there is a reason beyond structure.

The number that should make you humble

That is a detailed mechanistic picture. It is also, read carefully, a description of what these compounds do in research models rather than what a bowl of chilli does to a person.

The word in the title doing the most work is potential.

What is not in dispute is that the pigments are concentrated in and near the skin, which is the practical reason to leave it on beyond keeping the cubes intact.

Something worth knowing about your beans

One finding that sits outside cooking but affects what you buy.

An integrative review examined how climate change affects the nutritional value and food safety of legume seeds, drawing on five scientific databases and synthesising evidence across climate science, legume composition, stress physiology, pest-plant interactions and nutrition.

Legumes are described as essential for global food and nutritional security due to their high protein content, bioactive compounds and ecological role in nitrogen fixation. But climate change poses significant threats to their productivity, quality and safety, particularly through heat stress and pest pressure.

So the nutritional content of the beans in your cupboard is not a fixed quantity. It varies with the conditions the crop grew under, and those conditions are changing.

That connects back to a finding in another recipe in this collection, where the compounds causing digestive discomfort in dry beans varied 1.7-fold and rose when plants encountered stress during seed fill. Same underlying point from a different angle.

Storage and swaps

Keeps 4 days in the fridge and improves overnight. Freezes for 3 months.

The sweet potato softens further on reheating, which is fine, but do not freeze it if you want distinct cubes.

Swap black beans for kidney, pinto or a mix. All work.

Swap sweet potato for butternut squash, which behaves almost identically, or regular potato, which does not sweeten the pot the same way.

Add a tin of sweetcorn in the last 5 minutes, or a handful of spinach.

And do not skip the cocoa. One teaspoon adds no chocolate flavour, it deepens the colour and rounds off the acidity of two tins of tomatoes.
