Thai Green Chicken Curry
Twenty-five minutes from a jar of paste, or better from scratch. Either way, the coconut cream goes in first and splits on purpose.
What this is
Chicken simmered in coconut milk with green curry paste, aubergine and Thai basil. Twenty-five minutes if you buy the paste, which you should unless you have a reason not to.
It is the fastest route to a meal that tastes like it took real work, and the leftovers are better than the first serving.
The coconut research here surprised me, because the variation within the same fruit turns out to be larger than the variation between brands.
Ingredients
For 4 servings
600 g chicken thighs, sliced 3 tbsp green curry paste 400 ml tin coconut milk, full fat 200 ml chicken stock 2 aubergines, cubed, or 200 g green beans 1 red pepper, sliced 2 tbsp fish sauce 1 tbsp brown sugar or palm sugar Juice of 1 lime Large handful Thai basil 1 tbsp neutral oil
To serve: jasmine rice, extra lime, sliced red chilli, coriander
Method
1. Spoon the thick cream from the top of the coconut milk tin into a hot pan with the oil. Do not shake the tin first.
2. Fry the curry paste in that cream over medium heat for 2 to 3 minutes, until it darkens and the oil separates out. This step is the entire difference between a good curry and a pale one, and almost every home recipe skips it.
3. Add the chicken and turn it through the paste for 3 minutes.
4. Add the rest of the coconut milk and the stock. Bring to a gentle simmer.
5. Add the aubergine and simmer 12 to 15 minutes until tender. Add the pepper for the last 5.
6. Season with fish sauce and sugar. Taste and adjust; Thai curry balances salty, sweet, sour and hot, and it needs all four.
7. Off the heat, add the lime juice and Thai basil. Basil added to a boiling pan turns black and bitter.
8. Serve over rice.
Which coconut, and it matters more than you would think
This study answered a question I had never thought to ask.
Researchers systematically evaluated the fatty acid and phenolic profiles of coconut meat and water at tender and mature stages, to inform coconut milk production.
Mature coconut meat contained 299.7 g of total fatty acids per kg, predominantly lauric acid at 142.97 g/kg, making up 48 percent, then myristic acid at 57.39 g/kg and palmitic at 29.79 g/kg.
Tender coconut meat contained 90.87 g/kg.
That is a more than three-fold difference in total fat, from the same fruit at a different stage of ripeness.
The phenolic picture ran the other way. Tender coconut water showed the highest total phenolic content and the highest radical scavenging activity, and tender samples contained higher levels of bioactive phenolics including catechin, epicatechin and astilbin.
So mature coconut is fat-dense and tender coconut is phenolic-rich, and they are not substitutes for each other.
The analytical scale is worth noting: high-resolution mass spectrometry identified 1,065 phytochemicals, including 96 phenolics, with distinct profiles between tissues and developmental stages.
The practical version: tinned coconut milk is made from mature coconut, which is why it is rich and why this recipe uses the cream from the top of the tin to fry the paste. Coconut water from a carton is a different product from a different stage of the same fruit, not a lighter version of the milk.
This measured composition in coconut tissue rather than testing health outcomes, and it examined raw material for milk production rather than tinned coconut milk as sold.
What is actually in the curry paste
Green curry paste is lemongrass, galangal, green chilli, garlic, shallot, coriander root, kaffir lime and shrimp paste. There is a review covering why that combination is more than flavour.
It examined plant ingredients in Thai food, searching PubMed, Science Direct and Google Scholar for each plant name against anti-inflammatory, antibacterial and antiviral activity.
The framing is honest about what it is and is not claiming. The premise is that seeking cures for chronic inflammation-associated and infectious diseases is challenging and time-consuming, and that while research continues, consuming a healthy diet with functional ability might be an effective way to delay and prevent progression of severe health conditions.
Might be. Delay and prevent. That is appropriately cautious language for a review of traditional food ingredients.
It reports that vegetables, herbs and spices used in Thai cooking collectively possess multiple biological and pharmacological activities including anti-inflammatory, antimicrobial, antidiabetic, antipyretic, anticancer, hepatoprotective and cardioprotective effects.
That is a very long list, and long lists in reviews warrant scepticism rather than excitement. These are activities documented across a scattered literature, most of it laboratory work, not demonstrated effects from eating a curry.
The authors also make a point I like: the selected edible plants are not unique to Thai food, but the blend of recipes and preparation techniques is what makes the cuisine what it is.
This is a narrative review of laboratory and preclinical literature on individual plants rather than a study of people eating Thai food, and the activities listed are properties observed in research settings rather than health outcomes.
Why the basil goes in at the end, and which basil
Thai basil is not a garnish here and it is not interchangeable with the Italian kind.
A study evaluated 10 Thai holy basil accessions plus two commercial cultivars grown under controlled hydroponic conditions, investigating physiological responses and secondary metabolite variation at the flowering stage.
Antioxidant capacity varied considerably between cultivars. The greatest accumulation of total phenolic compounds, flavonoids and antioxidant activity by DPPH assay appeared in one variety, while the highest terpene content appeared in others, and growth and biomass peaked in a different variety again.
So among a dozen varieties of the same herb, the compound profile differed enough to be worth measuring and categorising.
What that means practically is narrow but real: basil is not one ingredient. Thai basil, holy basil and sweet Italian basil are different plants with different aromatic compounds, which is why substituting Italian basil into this curry produces something that tastes wrong rather than slightly different.
Those compounds are also volatile, which is the reason the method adds the basil off the heat. Boiling drives them off, and blackens the leaves besides.
This studied cultivar variation under controlled plant-factory conditions for agricultural purposes, not cooking, and it measured compound content rather than flavour or any health outcome. The point about heat and volatile compounds is standard practice rather than a finding from this paper.
Storage and swaps
Keeps 3 days in the fridge and is better on day two, once the paste has fully infused the coconut milk.
Freezes for 2 months, though coconut milk can split slightly on thawing. Stir it hard over gentle heat and it comes back.
Swap chicken thighs for prawns, added in the last 3 minutes, or firm tofu, or just more vegetables.
Swap aubergine for green beans, courgette, bamboo shoots or butternut squash. Denser vegetables go in earlier.
Use full fat coconut milk. Light coconut milk is mostly water and the sauce never comes together.
And fry the paste properly. Two minutes in coconut cream until the oil separates is the step that makes this taste like a restaurant curry rather than chicken in coconut soup.
Fry the curry paste in the thick cream from the top of the tin until the oil separates, and add the basil and lime off the heat.
