Turkey Meatball Soup

What I make when somebody is unwell, and when I want something substantial that does not sit heavily. The meatballs poach in the broth rather than browning.

What this is

Small turkey meatballs poached directly in a vegetable broth with orzo or small pasta. Forty minutes, six servings, one pot.

It is the dish I make when somebody is unwell, and also when I want something substantial that does not sit heavily.

Poaching the meatballs in the broth rather than browning them first is deliberate, and the reason is in the method section.

Ingredients

For 6 servings

Meatballs 600 g turkey mince 50 g breadcrumbs 60 ml milk 1 egg 40 g parmesan, grated 2 cloves garlic, minced Small bunch parsley, chopped 1 tsp dried oregano Salt and black pepper

Soup 2 tbsp olive oil 1 onion, diced 2 carrots, diced 2 sticks celery, diced 3 cloves garlic, sliced 2 litres chicken or vegetable stock 1 bay leaf 150 g orzo or small pasta 200 g spinach or kale Juice of half a lemon

To serve: more parmesan, black pepper, good bread

Method

1. Soak the breadcrumbs in the milk for 5 minutes. Turkey is lean and this is what keeps the meatballs from going dry and grainy.

2. Mix with the mince, egg, parmesan, garlic, parsley, oregano and seasoning. Handle it lightly. Roll into small balls, about 2 cm, and chill while you start the soup.

3. Cook the onion, carrot and celery in the oil for 10 minutes until softened.

4. Add the garlic, then the stock and bay leaf, and bring to a gentle simmer.

5. Drop the meatballs straight into the simmering broth. Do not boil it hard; they will break up. Poach 12 minutes.

6. Add the pasta and cook until just done, usually 8 minutes.

7. Stir in the greens, cook 2 minutes, then finish with lemon juice off the heat. Season properly; a soup this lean needs it.

Why turkey, in the numbers

A review examined the nutritional composition of 17 meat types, covering red meats (cattle, buffalo, camel, goat, sheep, horse, donkey, deer, pig and rabbit), white meats (chicken, duck, goose, turkey, ostrich and quail) and selected fish species, evaluating proteins, amino acids, lipids, cholesterol, fatty acids, vitamins and minerals.

Seventeen species. Most nutrition writing compares three.

The review's stated reason for existing is worth noting: it says most nutritional studies have focused on a narrow range of species and limited parameters, leaving gaps in understanding the broader nutritional value of different meats.

That is a fair criticism of the field, and it is why a comparison like this is useful.

The finding relevant here: both red and white meats provide high-quality proteins, although their fat content varies, with white meat generally containing less.

Which is the whole argument for turkey in a soup. You get the protein and the meatballs do not release a slick of fat across the surface of the broth.

It is also why the panade in step 1 matters. Lean meat has less fat to keep it tender, so the soaked bread is doing that job instead.

This is a compositional review across species, reporting nutrient profiles and associated benefits rather than testing health outcomes in people. Composition varies with breed, feed, cut and farming system, so no figure transfers exactly to the pack you bought.

What a real broth is made of

The base of this soup is stock, and there is a study that makes clear how much is actually in one.

Researchers identified the critical parameters for producing clear bovine bone broth, arriving at a simmering time of 4 hours, a temperature of 115C, a bone size of 4.0 cm and a liquid-to-solid ratio of 1:4, then established separate optimal conditions for an emulsified white broth.

Four hours, and the bone size mattered enough to be optimised. That tells you extraction is a slow physical process, not a flavour you can shortcut.

Analysis identified 17 amino acids in both broths, and volatile compound profiling revealed 57 distinct compounds in the clear broth and 64 in the white one.

Fifty-seven volatile compounds. That is what you are tasting, and it is the honest reason a stock cube does not compare: a cube carries salt, fat and a handful of flavour compounds, not fifty-seven.

The study was optimising bovine bone broth for industrial use, not chicken or vegetable stock, and it measured amino acid and volatile profiles rather than nutrition or any health outcome. Nothing here supports the health claims made for bone broth generally.

One thing about soup as a format

A small study on a very different soup makes a point worth carrying.

Researchers developed a vegan oyster mushroom soup powder enriched with moringa, mung bean and pumpkin, preparing four formulas with varying moringa content and running sensory evaluation, proximate analysis and total aerobic plate count.

The 1 percent moringa formulation had the highest consumer acceptance, with moisture, ash, protein, fat, fibre, carbohydrate and energy content of 13.6, 7.6, 16.3, 2.2, 9.8, 50.5 percent and 287 kcal per 100 g. The product had higher phenolic compounds, total antioxidants and iron than the local commercial comparison.

One percent moringa won. Two and three percent did not. More of a good ingredient is not better if nobody wants to eat it.

The framing in the paper is the part that matters: it notes that many plant-based convenience foods are high in fat, salt and sugar while low in nutrients.

That is the reason to make soup rather than buy it. A packet soup is engineered around shelf life and salt; this pot is stock, vegetables, lean meat and greens.

Storage and swaps

Keeps 3 days in the fridge. The pasta keeps swelling and drinking the broth, so add a splash of stock when reheating.

Better approach for leftovers: cook the pasta separately and add it per bowl. Then the soup keeps 4 days and stays a soup.

Freezes 3 months without the pasta and greens. Add both fresh.

Swap turkey for chicken mince, or for pork if you want them richer.

Swap orzo for broken spaghetti, small shells, rice or pearl barley, adjusting the time.

And do not let it boil once the meatballs are in. A hard boil breaks them apart and clouds the broth, and both of those are one-way changes.
